It is only when thick finish bridges over gaps such as worm holes that the trapped air attempting to rise causes bubbles. Thin finish applied sparsely will prevent that. If this is a kitchen or dining table, I would suggest oil-based polyurethane. You may thin it as much as you need to with mineral spirits. Bear in mind that thinner coats will help you avoid bubbles, but the corollary is that you'll need more coats to build it up.
