The trade off for this cutting speed is that the stone surface wears out or dishes more quickly than other stones. As a result, you need to flatten or true the stone more frequently. Coarser waterstones can he used to flatten finer ones. To flatten coarse waterstones, you can rub them on a diamond hcnchstone, or silicon carbide sandpaper or powder placed on a flat, hard surface. Bear in mind that while waterstones do wear faster than other stones, they still have a reasonably long service life—from 5 to 20 years, depending on size and amount of use,

Waterstones come in grit sizes from 80 grit (extremely coarse) to 8.000 grit (extremely fine). When selecting stones, bear in mind that ihe above are Japanese grit designations, which lend lo be much higher than II.S. grit designations.. The chart on page 26 compares these to standard U.S. grit sizes and stone equivalents. Coarse stones (80 to 600 grit) are used for "hand grinding." (as you would with coarse Crystolon, India, or coarse diamond slones). Medium (800-I2CK) grit) stones arc used for general sharpening; fine (2000-8000 grin are used for honing (removing the wire burr left by coarser stones) and polishing. An 8,000-grit "gold stone" provides a highly polished, scalpel-sharp edge, and is often used in lieu of stropping or honing wiih fine, powdered-abrasive compounds.

Most waterstones must be soaked prior to use (usually 5 to 20 minutes, depending on coarseness). During sharpening, you periodically splash water on the stone surface to expose fresh abrasive particles. However, if you continue to sharpen tin the

By taking advantage of this characteristic, you can save money by skipping some of the intermediate grits. Just before switching to a finer-grit slone. allow the slurry to thicken, then lighten up on the pressure applied Lo the stone.

The finest stones (6.000 or 8.000 grit) need not be soaked prior to use. You simply run the slone under the lap for a few seconds, then sprinkle on additional water as needed. Special small, coarse Nagura slones are used for polishing the surface
