The trade off for this cutting speed is that the stone surface wears out or dishes more quickly than other stones. As a result, you need to flatten or true the stone more frequently. Coarser waterstones can he used to flatten finer ones. To flatten coarse waterstones, you can rub them on a diamond hcnchstone, or silicon carbide sandpaper or powder placed on a flat, hard surface. Bear in mind that while waterstones do wear faster than other stones, they still have a reasonably long service life—from 5 to 20 years, depending on size and amount of use, Waterstones come in grit sizes from 80 grit (extremely coarse) to 8.000 grit (extremely fine). When selecting stones, bear in mind that ihe above are Japanese grit designations, which lend lo be much higher than II.S. grit designations..
