The best have developed through the years into carefully made, finely tuned instruments. The professional carvcrs I know treat Lheir tools with nearly the same carc as a concert violinist would use with his Stradivarius. They are always kept dry, well-honed, and they are never carelessly banged around the bench, as I see so many amateurs do with their tools. Buy the best quality you can and treat them well.
